Ingredients:

  • 1 small onion, thinly sliced
  • 1 serrano pepper, slit and sliced
  • 1 green onion, finely chopped
  • 1 red bell pepper, cut into ½” pieces
  • ½ to ¾ cup chicken pakora mix
  • ½ tsp baking powder
  • Water for mixing
  • Oil for frying

Directions:

  1. Prepare and mix the vegetables.
  2. Combine with chicken pakora mix and baking powder. Gradually add water until the vegetables are well coated but not runny.
  3. Heat oil in a frying wok. Test the batter for seasoning.
  4. Fry small batches of veggie pakora until golden brown, draining on paper towels.
  5. Serve with your favorite chutney or ketchup, and enjoy with a hot cup of tea.

Note: This dish can be made with either Authentic Indian Spice blends and Expedition Spices chicken pakora spice. You can use any vegetables you like, such as cabbage, zucchini, eggplant, green tomatoes, or spinach.
