Ingredients

  • 2 lb sea scallops
  • 3 tbsp oil
  • 1 tbsp hari mirch masala Add to Cart
  • ¼ tsp brown sugar
  • ¼ cup chopped green onion

Directions

  1. Wash and pat dry the scallops.
  2. In a mixing bowl add the hari mirch masala with 2 tsp of water and the brown sugar to create a paste.
  3.  Toss the scallops with the paste, mix well ensuring they are evenly coated. Marinate for 30 minutes.
  4. Heat oil in a non-stick pan.
  5. When the oil is hot, add the scallops in a single layer. Sear for 2-3 minutes on each side, until golden brown. Repeat until all scallops are cooked, adding more oil between batches if necessary.
  6. Once all the scallops are seared, sprinkle with chopped green onions.
  7. Serve with tamarind chutney or your preferred sauce.

Note: This recipe can be made using either an Authentic Indian Spice Blend or an Expedition Spice Blend. I like to serve mine with tamarind chutney, hummus, and freshly baked pita chips. To make the pita chips, cut pita bread into triangles, spray with oil, sprinkle with homemade flavored salt, and bake at 350°F (175°C) for 7-10  minutes, or until crispy. Indian cooking is about intuition, not precision, so feel free to adjust the flavors as needed.
