Ingredients

  • 2 lb potatoes, cut as desired
  • 3 tsp sabzi masala Add to Cart
  • 1 tsp salt
  • 3 tbsp oil of your choice
  • ⅓ stick of butter, melted
  • 3 bay leaves
  • 1 tsp crushed pepper
  • ¼ cup finely chopped cilantro (for topping)

Directions

  1. Preheat the oven to 425°F Degrees
  2. Peel and cut potatoes into wedges or pieces.
  3. Soak the potatoes in added water until the sabzi masala is ready.
  4. Cut bay leaves into ½” pieces. Heat oil in a small pan, add sabzi masala and fry for about a minute.
  5.  Add bay leaves and cook until they turn brown. Remove from heat and let cool.
  6. Drain the potatoes thoroughly and transfer to a mixing bowl.
  7. Add sabzi masala, and bay leaves, and mix well.
  8. Line a baking dish with parchment paper if necessary. Place potatoes in the baking dish and drizzle with melted butter.
  9. Bake uncovered at 425°F for 30-40 minutes or until done.
  10. Broil for a few minutes until lightly browned and crisp, watching closely to prevent burning.
  11. Garnish with cilantro and serve.

Note: For Expedition Spice Blends, omit bay leaves and use parsley instead of cilantro. Optional additions include pre-cooked chicken breast or cheese, added before the final baking phase.

This recipe can be made with either an Authentic Indian Spice Blend or an Expedition Spice Blend. Indian cooking is about intuition, not precision—so feel free and adjust as needed.
