Machli Masala

Cooking with seafood is a regular part of daily life for many in India, but for the people of Hyderabad, a bustling city of millions, it is a luxury enjoyed only for a few months each year.
During this time, we savor every opportunity, preparing everything from fish curries to fried fish, and even a gourmet biryani that few families dare to attempt due to its delicate nature. If you want to honor someone, you make a seafood dish. I prepare my fish biryani only when my mom visits, which happens once or twice a year, and she always enjoys it immensely. It’s one of those dishes she says she no longer makes for some reason.
Although I learned much of my cooking from my mom, I’ve noticed that in recent years, she has simplified her approach by sticking to just a handful of staple dishes. My pantry contains about 200 spices, herbs, and spice blends, while hers holds only about a dozen basic spices. Yet, she works wonders with those few. I’m always amazed by her culinary creativity. Let’s begin with one of our family favorites: Fried Catfish and hope it is as good as my mom’s.
