Machli Masala

Cooking with seafood is an everyday thing for many people in India, but for the people of Hyderabad, a city of millions,
it is a luxury that can be enjoyed only for a few months each year. During this time, we make the most of it—from fish curries to fried fish, and even a gourmet fish biryani that few families attempt due to its delicate nature. If you want to honor someone, you make a seafood dish. I make my fish biryani only when my mom visits once or twice a year, which she enjoys immensely. It’s one of those dishes she says she doesn’t make anymore for some reason. Though I’ve learned much of my cooking from my mom, I’ve noticed in recent years she has simplified her life by sticking to just a few basic dishes. My pantry holds about 200 spices, herbs, and spice blends, while her pantry contains only about a dozen basic spices. Yet, she works wonders with those few. I’m always amazed by that. Anyway, let’s start with my family favorite: Fried Catfish, a typical Indian dish.

Ingredients

Coriander, cumin, turmeric, Kashmiri chili powder, garam masala, salt and other spices.

Uses

Use 2tbsp of this spice blend to marinate any fish or seafood.
